Founded in 1961 by Isac Chiva, Georges Duby and Daniel Faucher, Études rurales is an interdisciplinary analysis of the rural world. Faithful to its original concerns, the journal remains committed to the non-urban in all its cultural, social and political dimensions. While agricultural production and the food vocation of rural worlds remain fundamental subjects, contemporary changes are turning our attention in new directions, such as environmental issues and relationships with living organisms. Welcoming all social science disciplines, Études rurales promotes field research and the production of knowledge, and publishes only original texts. Contaminated infant formula, adulterated oil, processed meat: few products have been the subject of a health scandal in China over the past twenty years, generating a climate of mistrust towards those involved in the food production chain and public authorities. Eating healthily and safely is a daily concern that affects the entire population. This issue brings together five ethnographic investigations that highlight how producers, consumers, government agencies, local executives, and private companies are attempting to rebuild forms of food trust. From the promotion of short supply chains to the opening of new markets through digital platforms, including the rehabilitation of practices that run counter to standardization and the diversification of hygiene legislation governing work in restaurants, these contributions examine the social, economic, and political dynamics at work behind discourses on food quality and safety. Young people returning to the land, delivery drivers, cooks or ordinary citizens: the interweaving of scales and the observation of their daily practices allow us to take an original look at the challenges facing contemporary Chinese agri-food systems.
